Selecting & Storing
There are dozens of varieties of avocados. The California Haas variety being the most popular supplying 95% of avocado in the North America.
They are ripe when slightly soft but should have no dark sunken spots.
Once opened they can be refrigerated for 2-3 days in a sealed container. Adding a little lemon juice will prevent browning.
Buying them unripe, they ripen in a few days at room temperature.
